Salmonella, E. Coli and Listeria are between the most common reasons for recalling meat products. Even though bacteria get killed by proper heat treatment, cross-contamination may happen when bacteria are found in the raw meat handled by customers in their kitchens. There is a trend not to fully cook some meat dishes, which can potentially become hazardous and highlights the importance of keeping the best hygiene standards. As in other sectors, additional challenges in meat processing are the lack of available workforce in some geographical areas and the aim of improving the sustainability of their operations

AUTOMATING THE
DISINFECTION
PROCESS
Every processing area is different, but it can be estimated that manual disinfection of 3000m2 requires 2.5 hours and 2-3 workers. ALVAR automates the disinfection process, with consequent savings in labour costs. Automation also reduces the exposure to human errors and to labour shortages
IMPROVED
SUSTAINABILITY
Misting is an optimised method of using water and disinfectant chemicals. Our systems are custom-made, but, on average, we reduce the consumption of water by 90% and of chemicals by 70% during the disinfection process

MACHINERY
Enclosed machinery, like cutting machines or filleting machines, can be particularly challenging when it comes to sanitation. Hard to reach areas, hidden surfaces and gaps in the machinery entail a difficult and time consuming task for the cleaning team. ALVAR has developed Mist Focus, a solution to ease and improve the hygiene in complex machinery. Mist Focus automatises the disinfection process by creating a dense disinfectant mist inside the machinery, reaching all areas and gaps. Mist Focus is a great extra protection tool, but a previous proper cleaning is always needed
